The Case About Tropical Oils
For years coconut oil has been receiving bad publicity created by Western consumer activist groups mainly because of its high level of saturated fat. Through decades of smear campaigns we have been conditioned to think that unsaturated fat is the healthy oil (the term oil and fat is used to represent the same product depending on its physical state.....liquid = oil, solid = fat). This is just a business proposition to promote unsaturated Western temperate climate vegetable oils. We hear  lipid terminology like saturation, monounsaturation, polyunsaturation,  triglycerides and glycerol and begin to wonder how all these fit into the total fat picture ("The Skinny on Fats").  Is there a dark side to unsaturated fat?  The link between saturated fat and raised cholesterol (myths & truths) is ingrained into us by publications from powerful Western medias. We are alarmed over cholesterols in our daily food, but missed the point that "absorption of cholesterol from foods is limited to no more than 400-600mg a day. The liver synthesizes more than ten times as much. In other words, serum cholesterol comes from the cholesterol pool of the body, which is replaced daily by biosynthesis rather than from food (The Truth About Coconut Oil, pg 157, Conrado S. Dayrit, MD).  And,  no one's ever proved that saturated fat clogs arteries and causes heart diseases.  Not eating fat is truly off the mark. We need to get the facts about fats straight if we are to make intelligent dietary choices.  Eat fat - your life depends on it!

While it is true that coconut oil does contain high levels of saturated fat (up to 95%), we missed out the fact that practically all prior researches used hydrogenated and highly refined coconut oil instead of natural coconut oil. Moreover, coconut oil contains MCT which is acknowledged as the the 'good saturated fat'. Natural fats in coconut oil exist in the "Cis" form and industrial  hydrogenation converted some of them into "Trans" fatty acid. The pioneering research of Dr. Mary Enig (University of Maryland) has proven that trans fatty acid is the real culprit in the raised cholesterol level, which; since 1st January 2006; led to compulsory trans fatty acid labeling of ALL food in the USA. Trans fatty acid also occurs in some natural food but it is Man's interference with the order of nature that has created this big problem for human health. The world is now having a new look at coconut oil  and we should clearly be in support of Good Health in the 21st century (Mary Enig)

Coconut oil is a most important vegetable oil because it contains the ONLY  known source of edible Lauric acid (C12) in high amount of about 50%  of the total oil content.  Lauric acid, in its monoglyceride form, has powerful antiviral, antibacterial and antifungal property, an important aid to today's toxic world.  Her researches in the University of Maryland led to the awareness about "transfat" and new transfat labeling requirement in the US since 2006.

The usual source of saturated oil/fat in the modern diet comes either from long chain animal fats (containing cholesterol), and  vegetable oils. Controversies arising from saturated oils/fats studies in the past were due to the non-declaration of sources for the oil/fat and degree of processing involved (eg. refinining, bleaching, deodorization and hydrogenation). Processed oil is so prevalent today that we pay scant attention to its danger until 2006 when trans fat labelling became compulsory in USA (due to the pioneering efforts of American researcher like Dr. Mary Enig).  Probably the only natural oil we are aware of is "virgin olive oil" and its health benefits. "Virgin coconut oil", which is a  far more superior natural "good fat" made its appearance only in year 2000 and became widely know only from 2004 onwards. During the 1980s some high priced natural coconut oil, known commercially as a special grade of  unrefined and unhydrogenated "1% ffa crude coconut oil"  made from selected sun-dried copra, was already available in the market for a few selected buyers in the West. Today, virgin coconut oil is widely regarded as the best oil to use due to its high heat stability and high degree of saturation (the great fat debate).

It is now common knowledge that natural oil and processed oil are completely different in terms of benefits. Hence, while the natural oil brings you benefit, the processed variety may be killing you softly over the years. Research conducted on oil today must make known the source of the oil and the degree of processing (refined, bleached, deodorized, hydrogenated, etc). Most past researches on oils & fats were done with only scant mention on the source and degree of processing hence giving rise to questionable results. In fact, most of such researches were done using processed oils containing trans fats which have vilified the good natural fats. With new modern medicines and better health conditions we should be leading healthier life but development brought mankind new formidable diseases. Are we now just trying to treat diseases and degenerative conditions brought about by decades of commercialization of our food chain? Lauric Acid/Monolaurin :- A modern medical science breakthrough
We now know that 50% of the fatty acids in coconut oil is Lauric acid. Lauric acid is a medium-chain fatty acid, which has the additional beneficial function of being transformed into a substance called "monolaurin" in the human body. Monolaurin is an antibacterial, antiviral and antiprotozoal substance used by the human body to destroy lipid-coated viruses and bacteria by dissolving the external lipid coating, which is akin to a protective outer skin. Hence it is not surprising that HIV/Aids, herpes, influenza, cough, colds and other symptoms caused by such pathogens can be controlled by coconut oil. In fact, the most effective treatment for neurodegenerative diseases (eg:- Alzheimer's, Parkinson's. multiple sclerosis, autism, dementia, epilepsy and various emotional disorders) may be sitting on your cupboard shelf today.

The Healthiest Oil On Earth
The medium-chain fatty acids (C8 to C12) found in coconut oil have been shown to have formidable healing power and because coconut oil is a saturated fat it has high heat stability hence it does not form dangerous trans fatty acids when used in cooking. We now also know that medium chain fatty acid is metabolized in a different pathway from our standard cooking oil (which is 95% long chain). Fats are stored as Triglycerides in nature, i.e, three fatty acid molecules held together by a glycerol unit. Medium Chain Fatty Acids, the result of digestion of Medium Chain Triglycerides (MCT) in the body, are good fats (Medium Chain Triglycerides, Digestion Absorbtion of MCT ).  Coconut oil is "the healthiest oil on earth" due to the abundance of these good fats. Coconut oil is the only natural edible oil that is predominantly (C12) Lauric acid-based, forming upto 50% of the total fatty acids content.
